Ingredients:
600gr Big cod fillet
1 Bunch of chicory
1 Orange
1 Lemon
1 Spoon of pitted olive
1 Spoon salt cappers ( deprived from salt)
2 Twigs of mint
Oil
Salt
Pepper
Recipe: put the fish on a dish and then on a grill, cover with salt and let it in a fridge for 30 minutes. Wash it ( in order to remove the salt ), dry, take the fishbone off and slice it. Wash the chicory and blanch it for 1 minute in a low salted water. Steamer fish for 3 minutes with a pinch of mint. Grate the ½ orange peel and cut in pieces the orange. Emulsify 4 spoons oil, 1 spoon lemon juice and the juice of ½ orange. Add cappers, olive, salt, pepper and chopped mint. Arrange the chicory on dishes with fish, oranges in pieces, citronette and orange’s grated.
