Ingredients:
1 Chicken (around 1kg)
½ Litre white wine
1 Glass Cognac
A bunch of herbs (myrtle, thyme, bay, sage)
2 Onions
50gr Lard
800gr Potatoes
Salt
Pepper
Recipe:
Wash the chicken, dry and cut it. Put them in a terrine and sprinkle with white wine and Cognac; add some pepper grain, orange peel in pieces and the bunch of herbs. Marinate them for few hours. Brown minced onions in a saucepan with lard, take them out and put onions aside. In the same saucepan brown the chicken, add onions, salt and sprinkle with orange juice. After 20 minutes cooking unite peeling cubed potatoes cook them for another 20 minutes adding marinade.
