Ingredients for 4 persons:
350gr Carnaroli rice
½ litre Barberi D’Asti wine
1 crushed onion
Salt/Pepper
Butter/Grana Padano
For the broth:
1 liter water
Celery/Carrot/Onion
For cheese’s creams:
80gr Toma cheese
80gr Maccagno cheese
80gr Fontina cheese
¼ liter milk
20gr butter
For the wine’s reduction:
½ Red wine
30gr Sugar
½ spoon powder cinnamon
Recipe:
Prepare the wine’s reduction in a saucepan, add sugar and cinnamon. Prepare the cheese cream cutting in little cubes milk and butter, than put all in a saucepan. Keep the fire low and mix until the cream’s creation. Brown the onion in a pan, add rice and toast it. Add red wine leaving it to evaporate. Continue cooking, add broth and cook the rice for 15 minutes. Lastly add Parmigiano and butter. Put the rice on the dish and decorate it with cheese cream and wine’s reduction.
