Cru IL MONDELLO , the microarea, especially on the south part, presents solid calcareous soil and a very good exposition, essential qualities for the production of high quality wines.
Grapes: 100% Garganega
Harvest period: October.
Harvesting method: manual labour.
Vinification: “appassimento” (drying) of the grapes on matts for 4 months. The pressing of the grapes is made at end of January, followed by controlled temperature fermentation. Refining: the wine ages in tonneaux for one year. Then rests for 4/5 months in bottle before released.
Billiant gold yellow COLOUR. The BOUQUET is intense and fruity; hints of honey, toasted almonds and sweet vanilla. On the PALATE it results velvety, fullbodied, rich, with deep notes of acacia honey. Persistent and wellbalanced aftertaste.
Food matching: il Mondello is a perfect desserts wine (serving temperature 10-12 °C), but it’s really nice also as meditation wine (serving temperature 16-18 °C).
