Press release SALONE BCM Bordolesi Cabernet Merlot “The Nero D’Arcole we tasted as during its preview (made by the estate ‘Desmonta’, owned by the Bixio family) convinced us: it sported a good violet colour, tending to the granate, an intense bouquet of liquorice, plum, cherry and light pepper, a good persistance of taste-bouquet”
Grapes: 80% Merlot, 10% Cabernet Sauvignon, 10% “Segreto dell’Enologo”.
Production area: VENETO Region, Veronella town in the Arcole appellation.
Vinification: manual selection of the grapes and following drying in a controlled environment for 40 days. Maceration and following fermentation for 10-15 days at a controlled temperature. Refining for about 9 months (January- September), 50% in Tonneaux and 50% in big oak of Slovenia casks of 30/60 hl. Settlement in steel container for 3 months and following bottling. Refining in bottles for 3 months and presentation of the product on the market.
The COLOUR is deep red. In the BOUQUET the fruit is in clean and fleshy evidence. Notes of cherry, cocoa and tobacco with some spicy notes. The PALATE has an exceptional power and a radiant gustative persuasiveness. Soft and persistent, pleasantly tannic with jam’s notes.
Food matching: ideal with dishes of meat, grilled meat, game, seasoned and hot cheeses. Serve at a temperature of 18-20 °C.
