GRAPES: Moscato bianco 100% .
PRODUCTION’S AREA : Castiglione Tinella, province of Cuneo. Hills in the south-east area, with calcareous and sandy ground at 320 m.s.l.
VINIFICATION: the Muscat grape, aromatic for excellence, needs of a particular vinification to conserve the fruit fragrance in the wine. After the manual grape harvest, the grapes are gently pressed and the must obtained is made brilliant trough clarifications and filtration. The must is conserved in refrigerant tanks until the moment of the elaboration in autoclaves to obtain a lively wine through a fermentation at a controller temperature trough the use of selected yeasts.
CHARACTERISTICS PERLAGE fine and persistent. COLOUR light straw yellow. BOUQUET fragrant and fresh with notes of flowers as gardenia and of aromatic herb. PALATE sweet, pleasantly slightly sour, with a persistent flavouring, full-bodied, velvety and round.
FOOD MATCHING: perfect as dessert wine, goes well with strawberries, peaches stuffed with macaroon, tarts and hazelnut cakes. To serve at 6-8°C.
