Grapes: 70% Corvina Veronese, 20% Rondinella, 10% Molinara.
Production’s area: Veneto Region. Hills in the Valpolicella Classico area.
Vinification: The grapes are harvested and then semidried for 5 months in special mats. The grapes are then gently pressed at end January with maceration starting at 22°C ending at 28°C. The wine is aged at least for 2 yea rs in large oak barrels and then rests for 4 months in bottle.
Characteristics
Colour: rich dark ruby color.
Bouquet: Fruity bouquet with notes of plum jam, raisins, black cherries and vanilla.
Palate: typical notes of cocoa and vanilla with a pleasant spicy finish.
Food matching: Roasted meats, hard cheeses, game or braised meat. Service temperature: 18° - 20° C .
